Familiar Flavours, Fresh Perspectives: Chef Mauro Baldari Takes The Helm At Nobu Kuala Lumpur

Exploring the restaurant’s culinary philosophy through Chef Hervé Courtot’s Signature Osusume and the arrival of its new Executive Chef.

At Nobu Kuala Lumpur, reinvention is less about abandoning the familiar than finding new ways to interpret it. As Executive Chef Mauro Baldari begins his tenure, the restaurant’s Japanese-Peruvian philosophy offers a framework for exploring how an established culinary identity can evolve while retaining its defining character.

A special preview brought this philosophy to the fore through Chef Hervé Courtot’s Signature Osusume and a selection of hot and cold dishes. Coinciding with the Nobu Corporate Chef’s return to Kuala Lumpur, the menu provided a glimpse into the culinary approach shared across the restaurant’s international kitchens.

Omoide, Nobu Kuala Lumpur’s cocktail of the month set off the evening. Made with clarified coffee, rum and a cekodok banana foam, the sweet, tropical drink reinterprets the espresso martini with a distinctly Malaysian touch.

The Balance Of Flavours

As guests mingled, appetites were satiated with Nobu’s Nori Tacos, featuring a quartet of crisp nori shells filled with lobster, tuna, guacamole and caviar, and salmon. Compact and playful, each combines distinct ingredients and textures in a single bite. The Shima Aji Goma Ponzu was another standout with fresh, savoury notes, while the Scallops Kataifi Tamari Honey paired crisp pastry with sweetness and umami.

The Tuna Tartare Calamansi Amazu Ponzu continued the citrus-led thread, bringing brightness to the progression. Across the selection, acidity lifts richer flavours, while contrasting textures give each dish its character. These combinations reflect Nobu’s established culinary language, in which Japanese techniques meet Peruvian influences through carefully balanced flavours rather than a single defining ingredient.

The arrival of Wagyu Tenderloin with Truffle Crust shifted the emphasis towards richness, providing a more substantial counterpoint to the lighter dishes. Moving between freshness, sweetness and savoury depth, the selection demonstrates how variety can emerge within a recognisable culinary framework.

An Identity In Motion

Mauro Baldari

In between servings Chef Mauro makes an appearance. Explaining some of the dishes, he also reiterates the task ahead which is to carry Nobu’s culinary philosophy forward in Kuala Lumpur. His experience across Italy, London, Dubai and Doha, including years within the Nobu family, brings an international perspective to the role. The challenge is to maintain the consistency expected of a global restaurant brand while allowing room for individual interpretation and local dining preferences.

As demonstrated during the evening, the collaboration between Chef Hervé Courtot and Chef Mauro Baldari marks a meeting of experience and perspective, bringing together a shared understanding of Nobu’s culinary approach. As Chef Mauro takes the helm in Kuala Lumpur, these established principles provide a foundation for his own interpretation, allowing the restaurant’s signature Japanese-Peruvian cuisine to evolve while retaining its distinctive identity.

At Nobu Kuala Lumpur, reinvention need not mean starting over. It is about preserving a distinctive culinary identity while allowing fresh perspectives to emerge within it. And judging by this culinary showcase, it promises to add another appetizing chapter to the iconic restaurant.
