For the first time, three-Michelin-starred French restaurant Odette will be bringing a selection of desserts outside of the restaurant and into your home as part of a limited-edition 6-piece festive box for the Christmas season.
The box contains three bijou treats inspired by the exacting artisanship and indulgence of French entremets, a meticulous construction typically involving multiple layers of sponge, mousse, cremeux and glazes.
Striking a balance between the flavours, aromas and textures of each component – along with the final aesthetic of the finished product – is key to successfully pulling off the sophisticated treat.
The exquisite desserts are created under the auspices of its chef patissier Louisa Lim, a member of the team since 2019 who’s cut her teeth at such fine dining establishments as Hexagone and Histoires in Paris, along with Apicius in Tokyo (where she created the dessert menu).
The recipient of the Asia’s 50 Best Pastry Chef award earlier this year now transforms the warmth and unfettered joy of the festive season into a trio of exquisite petits gateaux (little cakes) that express her mastery of French pastry techniques.
The L’Exotique imagines a white Christmas in a tropical setting, draping locavore fruits like mango, lychee and pineapple in a coconut mousse and Jasmine tea-infused chantilly cream, while a reinterpretation of the classic Mont Blanc – simply but aptly titled My Mont Blanc – balances velvety Ardeche chestnut with Corsican clementines, rum and vanilla.
The final dessert, inspired by the chef’s favourite childhood Christmas treat of Ferrero Rocher chocolates, is monikered Hazelnut & Chocolate Delice – featuring a delicate interplay of hazelnut praline, crisp feuilletine layers and salted chocolate sable.
She says, “Christmas has always been my favourite time of the year. It’s a season that brings people together over shared feasts and decadent desserts.”
“My hope is that through my creations, they would bring the same sense of warmth and joy to the homes they grace,” Odette’s pastry chef continues.
The festive dessert box is available to pre-order now for self-collection from December 4 to 27 at either Odette or sister restaurant Claudine.
