For most whisky drinkers, sherry casks are simply part of The Macallan story. Behind the scenes, however, the relationship runs much deeper. The Scottish distillery’s long-standing partnership with Valdespino, one of Jerez’s oldest sherry houses, has evolved into something far more integrated, culminating in the launch of Valdespino Vermouth Origen.
The release follows The Macallan’s acquisition of a 50 per cent stake in Bodegas Grupo Estévez, Valdespino’s parent company, in 2023. The move transformed the distillery from a customer of sherry-seasoned casks into an active participant in how the wines used to season those casks are produced.
Exploring Casks
That level of involvement is part of a wider strategy that sees The Macallan exercise control over much of its cask-making process. From selecting oak in northern Spain to seasoning casks in Jerez before they are shipped to Scotland, the distillery has spent decades refining a vertically integrated approach designed to ensure consistency and quality.
Vermouth Origen is perhaps the clearest expression yet of what that relationship makes possible. Produced using sherry wine crafted to The Macallan’s specifications, the liquid is aged in virgin oak casks destined for The Macallan’s cask programme before being blended with a hydroalcoholic maceration of botanicals, fruits and wine distillate. A touch of Valdespino Moscatel sherry adds sweetness, while the final blend rests before bottling according to a recipe dating back to 1920.
While not a whisky, Vermouth Origen draws directly from the same sherry expertise that defines The Macallan’s celebrated Double Cask and Sherry Oak collections. Both ranges rely on carefully seasoned oak casks from Jerez to develop their distinctive flavour profiles and natural colour.
In that sense, Vermouth Origen is more than a new release. It offers a rare look at the foundations of The Macallan’s whisky-making philosophy, demonstrating how its investment in sherry production continues to shape the character of the spirits for which the distillery is best known.
