WINE FROM AN UNDERSEA CELLAR, ANYONE?

The Edivo Vina winery in Drače, about an hour north of Dubrovnik, Croatia, is offering visitors the chance to slip on a wetsuit for a visit to its underwater cellars. Yes, you read right – this experience also includes visiting bottles stored in a sunken ship at the bottom of the Mali Ston Bay! The wine-making begins on dry land, of course, before being transferred to specially made amphorae – clay jugs, based on vessels used in Ancient Greece. The underwater winery then ages its pours for up to two years in the Adriatic Sea. To prevent leaks, Edivo Vina layers its bottles in rubber, and then places them in the amphorae. The clay jugs, favoured in antiquity, are then lowered down to the sea floor in cages, and weighted down with rocks.
