2. Oolong tea-smoked roasted Irish duck and white pepper crab: Wan Hao Chinese Restaurant, Singapore Marriott Tang Plaza Hotel
A unique creation is Wan Hao Chinese Restaurant’s Oolong Tea Smoked Roasted Irish Duck Rice Dumpling ($20), which is inspired by the classic Chinese dish of tea-smoked duck. Hailed as the ‘Wagyu of Duck,’ the Irish duck undergoes a six-hour poaching process, yielding a heavenly, melt-in-your-mouth texture. Infused with premium imperial oolong tea, the rice dumpling has a lingering delicate floral aroma. Wan Hao is also known for its best-selling White Pepper Crab Rice Dumpling ($22). The flavorful chunks of crab meat bring a touch of sweetness, while the black-eyed peas offer a satisfying chewiness and subtle earthy notes. But at the heart of this dumpling’s flavour is the freshly ground white pepper, whose aromatic qualities lend a distinctive spiciness. Available till June 22.
