Illustrious chef Andre Chiang will be back in Singapore for a two-week pop-up event at the Raffles Hotel Singapore in March, some six years after closing his eponymous French fine diner Restaurant Andre here and returning to Taiwan.
There, the recipient of the prestigious Asia’s 50 Best Restaurants’ Lifetime Achievement Award busied himself with serving a haute, French-influenced take on the cuisine of his home country at his Taipei restaurant Raw, which went on to earn one Michelin star at the Guide’s first outing in Taipei in 2018 – and another just a year later. He also helmed Sichuan Moon, which opened at Wynn Palace in Macau in 2019.
Now, from March 13 to 24, the chef – along with his entire culinary team at Raw – will be hosted at La Dame de Pic in Raffles Singapore, serving shades of his Taiwanese flagship alongside returning favourites from the shuttered Restaurant Andre.
All of this is rooted in his self-styled culinary “Octaphilosophy”, which brings together what he believes are the eight fundamental elements of gastronomy – salt, texture, memory, purity, terroir, south, artisan and uniqueness – with the technical exactness of Asian culinary traditions, and Western proclivities for seasonal produce.
The price of entry is a grand $650 per guest for a dozen courses, inclusive of an alcoholic or non-alcoholic beverage pairing of six drinks.
Raffles Singapore’s chef de cuisine Alexandre Alves Pereira and pastry chef Clement Cano will make use of chef Chiang’s layover to head to Valence for a culinary sojourn, where they will be working closely with French culinary legend and La Dame de Pic’s patron, Anne-Sophie Pic, to create a new spring menu for her Michelin-starred Singapore outpost.
Previous high-profile residences at the Raffles Singapore include last year’s edition of the Chef World’s Tour series, dubbed The Second Act, featuring Southern Californian chef Jose Luis Hinostroza and his Canadian contemporary Ben Ing – both of whom are alums of the legendary Noma – separately at the hotel’s Bar & Billiard Room.
