After nine years of helming contemporary British fine-dining restaurant Jaan by Kirk Westaway, chef Kirk Westaway is expanding his dining footprint. The British chef has opened The Albion by Kirk Westaway, a casual modern British restaurant in Ho Chi Minh City on November 4.

Located on the 23rd floor of Hôtel des Arts Saigon – MGallery Collection, The Albion by Kirk Westaway, named after the ancient term for Britain, seeks to bring guests back to the glamorous 1930s through a unique culinary journey through Britain, featuring clean, bright, and fresh flavours.

The restaurant, which is located in the financial hub of Vietnam, is led by Head Chef Christopher Clarke, a long-time friend of Westaway.

At The Albion by Kirk Westaway, guests will be entertained with a treat to an array of dishes that celebrates British cuisine through a contemporary lens, offering refined renditions of classic flavour pairings in a vibrant, unexpected, comforting, and approachable way.

For instance, Kirk’s Caviar Sandwich, an egg sandwich that blends a freshly baked muffin with a mixture of poached Japanese egg, house-made mayonnaise, crème fraiche, and a generous spoonful of Kristal caviar, fresh chives, and shallots.

In addition, for a show-stopping main course, guests could savour The Albion Fish ‘N’ Chips, where Chef Kirk has refined every element of this beloved British dish, creating the perfect contemporary rendition.

It is brined and fried in a beer batter made with local ale and served with a sweet pea purée made from fresh peas. The chef’s house-made tartare sauce features local organic cucumbers marinated and matured in apple cider vinegar, combined with mayonnaise, dill, capers, lemon, and parsley for a tangy finish.

Exciting gourmet offerings

A night’s out is not complete without the company of family and friends. Through excellent crafting by both chefs, they have created an exciting spread of abundant sharing platters designed to unite people.

For instance, guests can indulge in the Whole Roasted Chicken. The Chicken crown is slowly roasted in the oven, basted with a rich thyme and chicken jus, while the confit legs and crispy stuffed wings add layers of flavour and texture.

Served with a velvety mashed potato, a butterhead salad, charred local sweetcorn, and a delicious chicken and thyme gravy, it’s a beautiful option for sharing or as a centrepiece to complement other main dishes.

The Albion by Kirk Westaway is open Monday through Saturday from 5:30 pm to 11:30 pm. In addition, guests can also chill out at the hotel’s Social Club Rooftop Bar, which specialises in handcrafted cocktails and fine wines, which makes it the perfect place to unwind before or after an unforgettable evening of contemporary British cuisine.
