The harvest began in Le Mesnil on the 17th of September. Champagne Salon symbolised the wafting fragrance of fruit and the abundance of dried roses. The Champagne is fresh with a splash of acidity coming from its years of ageing. The pale gold subtle colour brings out its fruitness.

Tasting Notes: The salon remains mysterious until your first sip. The champagne features notes of pineapple, lychee, and a touch of smoke. Imagine a tartar of langoustines, scallops marinated in kombu, or Daurenki imperial caviar – these pairings offer an extreme purity that marries well with the champagne.
