Jon Lee On Taking A Distinctly Human Approach Behind Penrose

Jon Lee of Penrose tells us about the bar’s success and a 
new venture to look out for.

With over a decade of experience in the F&B industry, Jon Lee has earned quite a name for himself. Cutting his teeth at establishments such as Tippling Club in Singapore under Joe Schofield, he decided to venture into something new upon returning to Malaysia. In 2022, Penrose was born, with its minimalist setting and expertise on classic cocktails, Penrose is one of KL’s beloved bars and is only the second Malaysian establishment to be recognised in The World’s 50 Best Bars list. 

How would you describe the state of the bartending industry right now?

Malaysia has experienced remarkable growth within the APAC scene, both as a host and a participant, showcasing the country’s unique offerings. Leading bars like Three x Co, Reka, and Cabinet 8 by JWC have pioneered innovative expressions of local flavours, allowing guests to explore diverse culinary zones within Malaysia. These establishments have created a vibrant local cocktail scene emphasising authenticity and exploration. 

Across the APAC region, there is a powerful synergy between brands, bars, and media, all working collectively to elevate cocktail creativity and a strong sense of community. Having taken about 50 flights throughout this region this year, I’ve seen firsthand how brands have become pivotal in supporting events that empower bars and bartenders as key cultural ambassadors. This collaboration creates a solid foundation for a thriving cocktail culture in APAC, rich in innovation and collective spirit. In terms of the scene globally, Europe remains a global leader in cocktail culture, with vibrant bars bustling even midweek. This sets a high standard that the APAC region is ambitiously working to match, and they are doing impressive work, setting trends and laying the groundwork for a cocktail culture that will flourish in years to come.

How has Penrose evolved since its opening? 

Penrose has continually evolved in operations, efficiency, and sustainability, striving to improve through constant learning. With a busy year behind us, we focus on maintaining Penrose’s distinct drink style, service flow, and atmosphere to ensure a consistent experience for our guests. We aim to keep things fresh, reserving any shifts in direction or new concepts until the time feels right— especially as the scene begins to saturate with similar offerings. 

What do you think contributed to Penrose’s success?

Our approach combines a precise selection of ingredients, consistency in execution, and a commitment to meeting expectations. We craft approachable yet thoughtfully composed drinks, creating an experience that resonates with everyone involved—from producers and suppliers to consumers and critics.

Success, in our view, is achieved when there’s a shared sense of satisfaction across all levels, building a true identity and a cohesive culture. Moving forward, we want to focus on sustaining this standard, expanding our reach, and inspiring excitement for future projects. 

What are some of the trends you’re noticing now from customers?

Guest preferences have shown consistent patterns—it’s often about who makes the strongest impression. Consumers are gravitating toward cocktails with softer, gentler flavours, moving away from heavy, intense drinks.

The trend now centres on light, refined, and minimally styled cocktails, where subtlety and elegance shine. People increasingly want a straightforward experience that reflects the menu’s descriptions, focusing less on elaborate narratives and more on authentic flavours.

What are some of the challenges facing the industry today?

In Malaysia, we’re still building a robust cocktail culture within the dining scene. While many drinks are available, crafted cocktails are gaining traction, thanks to the trust developed with key establishments. It’s a challenge we welcome, continually seeking ways to enhance the experience and address any gaps. After all, as they say, alcohol is a solution! 

Where do you see the most potential for growth for Penrose?

Penrose’s growth is rooted in a distinctly human approach, blending an inviting atmosphere with thoughtfully crafted drinks to resonate deeply with our guests. Rather than focusing solely on Penrose’s expansion, we see it as the foundation and inspiration for many future projects, serving as the starting point for what’s to come. 

What’s next for you? 

We’re creating a new space that builds on Penrose’s essence but with a more lounge- like vibe. While it won’t be as intimate, it will offer more space and a broader selection. I can share one small detail—it’s just a 9-minute walk from Penrose.
