Bvlgari Hotels & Resorts has announced the official opening of Il Ristorante – Niko Romito at its Bali resort, bringing the acclaimed Italian culinary concept to the Indonesian island’s southern coast.
Set atop the dramatic limestone cliffs of Uluwatu, the 24-seat restaurant offers guests an elevated dining experience that merges traditional Italian cuisine with the richness of Balinese ingredients. This latest addition joins a portfolio of Il Ristorante – Niko Romito locations in cities such as Milan, Dubai, Tokyo and Paris, each renowned for their refined, minimalist interpretation of Italian gastronomy.
Viva Italia
The Bali outpost is open exclusively for dinner, and its location—encircled by a tranquil reflection pool and ambient lighting—creates an intimate, sophisticated setting. Guests can choose from a four-course “I Classici” tasting menu, a seven-course “La Degustazione”, or an à la carte selection, all carefully crafted to highlight the synergy between Italian culinary heritage and the local terroir.
The four-course menu pays homage to classic Italian flavours, beginning with L’Antipasto all’italiana followed by handmade tortelli filled with smoked Balinese ricotta and a seafood dish of coral trout, scallops, and prawns. The meal concludes with Bread and Chocolate, a signature dessert by Chef Niko Romito, enriched with Balinese cacao.
The more elaborate seven-course Degustazione explores contemporary Italian cuisine inspired by the island’s atmosphere and ingredients. Highlights include scallops with pink prawn cream, poached black cod with cod milk, and Wagyu beef fillet scented with local black pepper. A refreshing wild berries sorbet with lemongrass mousse rounds off the experience.
Extended Options
For those preferring a more flexible dining format, the à la carte menu features standout dishes such as snapper carpaccio with green pepper, roasted tuna loin with fennel and citrus, and the signature Spaghetti e Pomodoro. Vegetarian options, including glazed aubergine and seasonal vegetable preparations, are also available.
In collaboration with Resident Chef Alessandro Mazzali, Romito has also created eight signature dishes unique to the Bali location. These include cold tagliolini with sea urchins, risotto with oyster, lemon and bottarga, and handmade duck tortellini with black summer truffle and Parmigiano Reggiano.
