Fine dining has long been about more than the meal itself. Increasingly, it is also about access—offering diners the opportunity to experience chefs, ideas and culinary traditions that would otherwise require a long-haul flight. This month, Sabayon at EQ continues that philosophy, welcoming Michelin-starred chef Charles Coulombeau for an exclusive seven-night residency that brings one of France’s most distinctive contemporary culinary talents to Kuala Lumpur.
Taking over the kitchen from 23 to 29 July, Coulombeau will present a bespoke five-course dinner menu created exclusively for Sabayon. It marks a rare opportunity for Malaysian diners to experience the cooking that has earned him recognition from the MICHELIN Guide, without leaving the country.
French Foundations, Global Perspective

Though firmly rooted in classical French cuisine, Coulombeau’s cooking reflects a far broader outlook. At both La Maison dans le Parc in Nancy and Yozora in Metz, the chef has developed a style defined by precision, restraint and an instinctive respect for seasonal ingredients.
Japanese culinary philosophy plays an equally important role in shaping his approach. Rather than relying on elaborate presentation or overt complexity, his dishes favour balance, clarity of flavour and carefully considered technique, allowing exceptional produce to remain the focal point.
It is this measured elegance that has earned Coulombeau recognition as one of a new generation of French chefs redefining modern gastronomy—drawing on tradition while embracing influences that extend well beyond France’s borders.
His residency also reflects Sabayon’s growing ambition to position itself among the region’s leading fine dining destinations. Perched on the 51st floor of EQ with sweeping views across Kuala Lumpur’s skyline, the restaurant has built a reputation for refined European cuisine, complemented by a wine programme that has received Wine Spectator‘s Best of Award of Excellence every year since 2020. Inviting internationally acclaimed guest chefs has become a natural extension of that commitment to delivering world-class dining experiences.
A Culinary Journey Through The Seasons

Created exclusively for the residency, Coulombeau’s menu offers a progression that mirrors his culinary philosophy—thoughtful, ingredient-led and quietly expressive.
Guests begin with a delicate pairing of avocado, sake and pear before moving through dishes showcasing hamachi, scallops and duck, each demonstrating the chef’s ability to balance classical French technique with Japanese restraint and contemporary global influences. Throughout the menu, acidity, texture and seasonality are carefully orchestrated, creating a dining experience that feels both refined and deeply personal.

Desserts continue that narrative, combining orange blossom, passion fruit and jalapeño before concluding with nougat and Bergamot de Nancy, an affectionate nod to the chef’s hometown in northeastern France. Optional wine pairings, including a premium selection, have been curated to complement each course.
While guest chef residencies have become increasingly common among luxury hotels, opportunities to experience a Michelin-starred chef of Coulombeau’s calibre remain relatively rare in Malaysia. More than a showcase of technical skill, his appearance at Sabayon offers diners an opportunity to experience the evolving language of contemporary French cuisine—one that honours tradition while embracing a broader, more global perspective.
For seven evenings only, that journey begins 51 floors above the city.
The five-course dinner presented by Chef Charles Coulombeau is priced at RM788+ per person, with an optional five-glass wine pairing at RM288+, or a premium five-glass pairing at RM488+. For more information and reservations, visit EQ Kuala Lumpur.
