Voyages Ayers Rock Resort’s exclusive Tali Wiru (meaning beautiful dune in the local Pitjantjatjara dialect) has re-opened for its latest season. The open-air gastronomic experience highlights fine dining on a remote sand dune overlooking Uluru and the distant domes of Kata Tjuta. Guests enjoy champagne and canapés at sunset, accompanied by the sounds of a digeridoo, followed by a four-course table d’hote menu with matched Australian wines. Mains feature flavours of Indigenous Australia with some exciting and unusual ingredients like Wagyu Beef Fillet with Saltbaked Celeriac, Paperbark Smoked Onion Soubise or Glacier 51 Toothfish with Parsnip and Miso Mousseline, Compressed Apple, Coastal Greens, Desert Oak, Fermented Muntries and Leek Ash. Finishing off the evening is a storyteller with tales of Indigenous culture, enjoyed with a port, cognac or native wattleseed-infused hot chocolate around the campfire.
