Encompassing all the flavours of the region into one beautiful package is the Nomad’s Globe. Much like a tiffin, the sphere is taken apart to reveal three layers, each containing a treasure within. On top is a Jaffna crab varai – a dry crab salad made with shredded Alaskan crab and turmeric, onions, ginger and garlic. Then, the heart is a cheemeen choru layered biryani that’s rich with apricot, raisins, prawns, saffron, crispy shallots and cashews. These sublime delicacies are supported by a base of lobster chettinad, a creamy curry known for its restrained use of spices that allows the delicate lobster flavour to swim through the palate.
