The gastronomical journey begins with Capesante Hokkaido, a delicious combination of pan-seared Hokkaido scallops, cauliflower emulsion, heirloom cauliflower, and Calvisius caviar. Guests will then sample the delicate Foie Gras, followed by Bottoni Ripieni, composed of button-shaped ravioli filled with braised lamb and artichoke, Castelmagno cheese fondue, and lamb ragout. A range of other delights, including Riso E Gamberi Rossi, Astice Blu, and Costoilette Di Wagyu – a wonderful treat composed of Wagyu braised short ribs, spinach mashed potatoes, spiced baby carrots, and gremolata are all also in store.
To end the experience, diners can enjoy a refreshing Frutti Di Bosco and La Sfera made from coconut foam, passion banana crème brulee, exotic fruit brunoises, and exotic sorbet. All these exquisite dishes can be washed down with the perfect wine pairings to take your fine dining experience to the next level. The restaurant’s expert sommeliers have tailored their choices to elevate the subtle flavours of each dish and bring out hidden flavours.
