While available in a wide range of flavours, textures and forms, the origins of this ubiquitous ingredient still remains very much a mystery due to lack of conclusive evidence. One legend states that it was accidentally discovered by an Arabian merchant, who had put his supply of milk into a pouch made from a sheep’s stomach before trudging across the desert where the heat of the sun caused the milk to separate into curd and whey. From mozzarella and cheddar to feta and Roquefort, this humble ingredient continues to churn out billions of dollars on the global cheese market, with the largest producers of cheese hailing from Germany, France and the United States.

Released by H Moser & Cie, which is available via The Hour Glass, the case of the Swiss Mad Watch features a unique composite made from resin and Vacherin Mont d’Or cheese from Switzerland, regarded by some as ‘the holy grail of raw milk cheeses’.
