Planteray Debuts An Underwater-Aged Rum In The Maldives

A spirit shaped by the the ocean’s depth and rhythm.

For centuries, the ageing of fine spirits has followed a familiar script—oak barrels, controlled climates, and the slow passage of time. At NH Collection Maldives Reethi Resort, that ritual has been quietly reimagined with Planteray Rum.

Together with the spirit maker,  the resort has introduced what it describes as the world’s first certified underwater-aged rum by a resort. Rather than cellars and warehouses, the spirit spent a year submerged ten metres beneath the surface, resting in custom-designed cages within the waters of Baa Atoll.

There, the conditions are less controlled than on land, yet no less precise. Constant temperature, hydrostatic pressure and the gentle movement of currents create an environment that subtly alters the maturation process. Over time, the ocean becomes an active participant—shaping texture, rounding edges, and lending the rum a distinct sense of place.

When Environment Becomes Ingredient

Retrieved ahead of the resort’s reopening in late 2025, the bottles surfaced marked by their surroundings, bearing traces of marine life and the passage of time beneath the sea. More significantly, they revealed a profile that diverged from convention.

According to Planteray’s blending team, the underwater ageing has resulted in a spirit with heightened smoothness and complexity—qualities typically associated with longer maturation periods. The interplay between motion and pressure appears to accelerate certain aspects of ageing, while preserving balance.

The experiment, while technical in execution, is framed as much by narrative as by science. By relinquishing a degree of control to natural forces, the process introduces an element of unpredictability—one that aligns with a broader shift in luxury spirits towards provenance and storytelling.

A New Depth Of Experience

At the resort, the rum is positioned not simply as a product, but as part of a wider sensory offering. Served at its signature mixology concept, the maritime-aged spirit becomes a focal point for cocktails that draw on both local context and global technique.

The initiative is set to continue, with further batches already resting beneath the waves. For Planteray Rum, it represents an exploration of how environment can shape flavour. For the resort, it offers something less easily defined: an experience that extends beyond the glass, rooted as much in place as in process.

In the end, the question is not simply how the rum tastes, but what it carries with it—a quiet imprint of depth, movement and time spent below the surface.
